How to Preserve Cheese Properly
Cheese is one of the most treasured creations in European gastronomy. Whether it is a delicate fresh cheese or a carefully aged variety, preserving its flavor, texture, and quality requires proper handling and storage. At CHALET Artisan Deli, we believe that great cheese deserves the same level of care at home as it receives in professional delicatessens.
Understanding how to store cheese correctly allows you to enjoy its full character while maintaining freshness and food safety.
Why Proper Cheese Storage Matters
Cheese is a living food product. It continues to change and develop even after it leaves the dairy. Exposure to improper temperatures, dry air, or contamination can quickly affect its taste, aroma, and texture.
Proper preservation helps to:
-
Maintain flavor and texture
-
Prevent unwanted mold growth
-
Protect the structure of the cheese
-
Extend shelf life without compromising quality
Store Cheese at the Right Temperature
Cheese should ideally be stored in a refrigerator at temperatures between 2°C and 8°C. This range helps slow down bacterial activity while preserving the cheese’s natural moisture and flavor.
Most refrigerators have a vegetable drawer or crisper section that provides a more stable humidity level, making it a suitable place for cheese storage.
Use the Right Wrapping Materials
One common mistake is storing cheese in tightly sealed plastic containers or plastic wrap. While plastic may seem protective, it prevents the cheese from breathing and can trap excess moisture, which may lead to spoilage.
The best approach is to:
-
Wrap cheese in cheese paper, parchment paper, or wax paper
-
Place the wrapped cheese inside a loosely closed container or reusable bag
This allows the cheese to maintain proper humidity while still allowing airflow.
Separate Different Types of Cheese
Different cheeses have different moisture levels and microbial environments. Storing them together can lead to cross-contamination of flavors and mold cultures.
For best results:
-
Store soft cheeses separately from aged cheeses
-
Keep strong-smelling cheeses away from milder varieties
-
Use separate wrapping for each type
Avoid Temperature Fluctuations
Cheese should not be frequently exposed to warm room temperatures and then returned to the refrigerator. Repeated temperature changes can alter its texture and encourage bacterial growth.
If serving cheese, remove it from the refrigerator about 20–30 minutes before consumption, allowing the flavors to fully develop.
Keep Surfaces Clean
Handling cheese with clean hands and using clean knives helps prevent contamination. Always avoid placing cheese directly on unclean surfaces or using the same knife for different cheeses without cleaning it.
Proper hygiene is a fundamental part of maintaining quality.
When Mold Appears
Mold on cheese does not always mean the product must be discarded.
For hard cheeses, surface mold can often be safely removed by cutting at least 2.5 centimeters around the affected area. However, soft cheeses with mold growth should generally be discarded, as mold can spread internally.
